Saw these at the supermarket for about $3. It's pretty pricey because you get so little from the what look like big shells; but it's pretty fun for impressing the one you're making this for without really breaking the bank. This recipe's like making garlic bread, except with slipper lobsters instead.
It's not enough of a portion for it to be a main, but you double the recipe and serve it with potatoes or other carbohydrates to turn it into one.
INGREDIENTS:
(Serves 1-2)
3-4 halved pieces of slipper lobsters
3-4 cloves of garlic, chopped
70g (or 5 tablespoons) of butter at room temperature
2 tablespoons of chopped parsley
A slice of lemon
Pinch of salt and pepper
METHOD:
Season the slipper lobsters shell side down with salt and pepper. Squeeze lemon juice over the top.
Mixed garlic, butter and parsley into a paste, then spread on the 'meat-side' of the slipper lobsters.
Heat up a pan till it is searing hot, then place the slipper lobsters 'meat-side' down. Turn over after about 30 seconds, and wait for the shells to turn red.
You may check for doneness with a skewer/fork, but it should be ready once the shells turn red.
Assembly
Arrange on a plate and serve immediately. Garnish with extra lemon slices/sprigs of parsley.
